Joseph McKenna
Chef Joseph
McKenna is a Certified Master Pastry Chef and Certified Hospitality
Educator.
Before
joining the Culinary Institute of America as a pastry chef
instructor in 1989, chef McKenna worked at various restaurants,
country clubs, and hotels, such as Fairmont Hotels, Westin
Hotels, Hyatt Hotels, Adams Mark Hotels and Omni Hotels.
Also an
accomplished and honored chef, chef McKenna received gold
and silver medals during the Culinary Olympics in 1984, 1988,
1992 and 1996 where he received a perfect score for his pastry
display in 1992. Other honors include numerous A.C.F. gold
medals and honors at the National Pastry Team Championship
in Beaver Creek, Colorado.
Chef McKenna
is a member of the American Culinary Federation and the National
Culinary Competition committee.

Chef Gerhard
Greub, owner of one of Chicago's favorite destinations for
fine pastries: Gerhard's Elegant European Desserts is a native
of Switzerland, and he received his formal apprenticeship
training in Zurich. After he broadened his knowledge in several
highly acclaimed Confectioner Shops as Commis Patissier, and
winter seasons in St. Moritz, he then traveled to the Caribbean.
