The enthusiasm that Chef Courtney Carroll brings to Albert Uster Imports is necessary for her busy position as Assistant Corporate Pastry Chef. “I am proud to be part of a team that is committed to excellence and innovation,” she says.
Her responsibilities in the company’s research and development kitchen include developing recipes, testing products, and assisting with demonstrations, special events, and Des Alpes University classes.
Chef Carroll earned a Bachelor of Arts cum laude in Political Science from James Madison University. It was ultimately the sweet side of life that called to her and she soon enrolled in the Pastry Arts Program at L’Academie de Cuisine, graduating with honors. This career choice proved to be a fruitful one that has led to Chef Carroll’s experiences which include: Pastry Cook at the Ritz Carlton Tyson’s Corner; Assistant Pastry Chef at Chef Geoff’s and, later, Executive Pastry Chef at Chef Geoff’s Downtown, both in Washington, D.C.; and a Baker/Pastry Cook at the prestigious The Inn at Little Washington. She joined Albert Uster Imports in 2005.
One of Chef Carroll’s goals is to master the science of pastry. “I am looking forward to experiencing the competition side of pastry, and,” she admits, “I’d like to eventually have my own pastry shop. Who wouldn’t?”
